Serves: 6 to 8 people
Directions: Purée all ingredients in a food processor until smooth.
Ingredients for Achiote:
Directions: Heat oil and seeds together in medium heat for 10 minutes. Strain and chill in the fridge for one (1) day.
Ingredients for Vinaigrette:
Directions: Blend everything in the food processor and chill.
Directions: Place octopus in a deep pot with boiling water. The octopus should be covered with water. Boil until tender (approximately 30 to 35 minutes, depending on the size of the octopus). Cool down immediately.
1 tbsp micro arugula
Spread the hummus in the plate with a spatula and spread the octopus around the hummus. In a bowl, mix arugula and vinaigrette, season with salt and pepper and place on top around the octopus.

El Grapefruit Tonic está espectacular. Sencillo y directo. Es el cóctel que te quieres tomar aquí y allá. La granada, toronja y frescura de la albahaca es como una hamaca que te hace sentir nítido, junto al dulce y la tónica. El Tanqueray lanza la sensación ligera y libre, como cuando estás en una hamaca que te mece de lado a lado y se comienza a sentir bien rico pero estás a punto de caer pegao’ y levantarte con una insolación. En conclusión, no hay razón para no pedirlo cuando vayas a Zest.
